It’s crafted from a blend of Xarel-lo, Macabeo and Parellada grapes in the heart of Cava country in the highlands of Penedès. Thanks to an extended 15 months of ageing on lees, it’s full of character. Fine notes of fruit and pastry give way to a well-balanced structure. This is a wine with unmistakable personality, and it will go great with paella, cheese straws, tortilla or salads. Also give it a go with creamy sauces, where Cava’s fresh acidity provides a great counterpoint to the richness.
