Le Moderato Revolutionary Cuvée White is a pioneering alcohol-free wine from Gascony, a region celebrated for its mild climate, perfect for cultivating Colombard grapes. The brand was founded in 2020 by Sébastien Layé, whose family has deep roots in Cognac winemaking, and Fabien Dessens, a pioneer in crafting innovative beverages. Together, they established Le Chai Sobre, France’s first centre of excellence for alcohol-free wine production, in partnership with a local cooperative. Using a gentle, low-temperature distillation process, they remove alcohol while preserving the wine’s structure and vibrant aromatics. Notes of pear, peach, and citrus zest lead to a lively, refreshing finish. Served chilled, it pairs beautifully with ceviche, seasonal salads or savoury white meats, enhancing their light and delicate flavours.
