Central Otago is famed for Pinot Noir, and you don’t need more than a few sips of this wine to understand why. Digger’s Law is made at the Gravity Winery, where ancient gravity-led methods are employed to gently guide the juice down four architectural levels and create wines that purely express their origins. In fact, from harvest to barrel, this Pinot Noir is barely touched before it is bottled – pretty impressive stuff. Full and vibrant, with a concentrated fruit core and silky tannins, this is a red that will stand up gorgeously to a range of different dishes.
