Description
Tulbagh, a town located in the Winelands of the Western Cape is in a horseshoe basin, once a pre-historic lake, formed by the Witsenberg Groot Winterhoek, Witsenberg and Obiekwaberg mountains. The climate is Mediterranean but the valleyâs unusual geography creates a unique phenomenon known as the âCold Trapâ where the nightâs cold air lies undisturbed in the bowl. This resultis in cooler day time temperatures that preserve the acidity vital for sparkling wines. Tulbagh winery is housed in buidings dating back to the 1700s and is home to the first underground cellar in South Africa. Despite estate being over 300 years old, it has been at the forefront of innovation throughout its history. It was the first winery to use cold fermentation and introduced night-harvesting to the country. This vibrant Brut has flavours of white peach, zesty pineapple and an elegant but crisp acidity through layers of soft bubbles. Pair with creamy Risotto, seared salmon or crusty sourdough bread with fresh camembert.
