Tony uses a range of innovations to explore its many different expressions – employing everything from concrete egg fermenters to French oak. New Zealand has shown itself to be prime territory for single-varietal wines, as the soil types and maritime climate with large diurnal shifts result in great intensity and vibrancy. This wine hails from Hawke’s Bay, in the east of the North Island, from vineyards embracing regenerative farming methods and minimal intervention. Aged in oak barrels to bring a bit of spice and complexity, you can expect notes of citrus, stone fruits and pineapple. Crack it open with buttery fish or chicken dishes to enjoy it to the fullest.
